Chocolate Crust

  • Sift flour and cocoa powder together; set aside. In a food processor, cream butter, salt, sugar and almond. Add the egg and powders gradually, and mix until homogenized. Wrap in plastic film and chill for 2 hours. Flour countertop, and work out a third of the pastry only. Roll out into a 0.12-inch/3mm thick disk. Prick pastry and lay over a baking tray lined with a baking mat; freeze 30 minutes. Preheat oven and pre-bake pastry sheet for 10 minutes at 375ºF/190ºC. Then cut pastry using the cake ring, remove excess dough and set aside.

Chocolate Custard

  • In a large saucepan, heat up milk and cream. Meanwhile, in a stand mixer fitted with the whisk attachment, beat to foamy stage the eggs with the yolks and sugar. Add the starch. Set mixer speed on low, and add chocolate in the hot milk-cream mixture and stir to melt until it boils. Pour in the egg-sugar mixture. Mix well and transfer mixture back to the saucepan. Bring to a boil and cook for 2 minutes whisking constantly. Mix using an immersion blender to smooth that out. Fill cake ring with the hot chocolate custard. Let cool off for 3 hours prior baking.

Baking

  • Preheat fan oven to 350ºF/180ºC. Bake flan for about 45 minutes. Let cool completely before taking out cake ring. Refrigerate flan overnight before slicing into desired portions. Chocolate flan can be brushed out using warm neutral. Sprinkle some cocoa nibs if desired. Enjoy!
