Equipment
- 1 Mandoline
- 1 Saucepan
- 1 Whisk
- 1 Paring knife
- 1 Large glass bowl or jar
Ingredients
- 300 g Red onions
- 350 g White vinegar
- 40 g Raspberry vinegar
- 150 g Water
- 90 g Brown or white sugar
- 6 g White and black peppercorns
- 10 g Crushed garlic clove
- 1 each Bay leaf
- 1 each Thyme sprig
- 8 g Grey salt
Instructions
- Orange salad with red onion pickles.
Preparing Onions
- Peel and slice onions into 2 mm thick rings.
- In a bowl, pack onion slices with herbs.
Brine
- In a saucepan, heat the vinegars, water, sugar, salt, garlic and peppercorns. Bring to a boil, stirring with a whisk to ensure the sugar is completely dissolved.
- Then pour the hot liquid over the sliced onions, and let sit for an hour.
Storage
- Seal tightly and store in the refrigerator for a day before using. Remove and discard garlic.
- Store pickles fully submerged in brine for up to 3 months.
