Batter
- To start, you will need a food processor to process the walnuts into a fine meal. This will add a rich nutty flavor and a pleasant texture to the financier. Next, add flour, baking powder, and sugar to the walnut meal in the food processor. These ingredients will help bind everything together and add a touch of sweetness to the pastry. In a separate bowl, whisk the egg whites until frothy, then add honey and vanilla for a fragrant and sweet aroma. Meanwhile, brown some butter on the stovetop until it reaches a toasty, nutty stage. Be careful not to burn the butter as it can ruin the flavor of the financier. Once the butter is browned, pour it over the egg white and nut mixture in the food processor. Give it a few pulses until everything is well combined. The warm butter will infuse the pastry with a rich, buttery flavor that is simply irresistible. Now, it's time to fill up a greased and almond-coated pizza pan or tart pan with the financier batter.
Baking
- Pre-heat oven to 350ºF/180ºC. Bake for about 35 minutes until golden brown.
