Tartare Mixture

  • Place fish in the freezer for 90 minutes. Pre-freezing fish firms up the flesh, making it easier to dice evenly and ensuring a clean presentation. Season tuna with the olive oil and keep refrigerated. Next, slice and cut the avocado into dice and season with the lime juice, salt and cayenne. The acidity of the lime juice will brighten up the avocado, while the salt and cayenne will add a depth of flavor and a subtle kick. Keep everything refrigerated.

Tamari Sauce

  • Mix all ingredients together.

Fried Shallots

  • Slice out shallots and toss them in flour. Shake off excess flour and fry. Transfer fried shallots onto a baking tray lined with paper towel.

Plating

  • Place cake ring on a plate. Create a layer of diced avocado inside and fill up the cake ring with the seasoned tuna mixture. Carefully remove the pastry ring to reveal the beautifully layered Tuna Tartare, and repeat. Top off with a generous sprinkling of crispy fried shallots, and vibrant arugula sprouts for a pop of color and a peppery contrast to the rich tuna and avocado. Finish off the dish with a drizzle of tamari sauce. Serve the Tuna Tartare with gaufrette potato or toasted baguette slices for a satisfying crunch and a hearty accompaniment to the dish.
