  • 500 g Extra virgin olive oil
  • 500 g Grape seed oil or similar

Black Truffle

Preparing Truffle

  • Gently brush off any dirt with a soft brush or wipe with a damp cloth. Pat dry thoroughly.
  • Thinly slice or shave the truffle. The more surface area exposed, the more flavor infuses into the oil. Note that if you own a restaurant, use truffle peels only and save the core for garnishing.

  • Heat the oil to 140°F/60°C. Turn off the heat and add the salt and stir it. Put the lid on, let stand for 30 minutes and refrigerate overnight.

Filtering

  • Pass the truffled oil in the chinois lined with a cheesecloth. Save truffle shavings for your next dishes.

Storing Truffle Oil

  • Fill small glass bottles or jars and keep truffle oil refrigerated for up 4 weeks.
