Almond Cream

  • Combine the softened butter with sugars, salt, almond meal, and starch in a mixing bowl or food processor. Cream them together until the mixture is light. Next, add in the egg, vanilla and rum – mix well. Use almond cream at room temperature.

Montage

  • To start, you'll need to prepare your apples by cutting them in half and removing the core and stem using a melon baller. Next, slice the apple halves thinly and soak them in lemon water to prevent browning. While the apples are soaking, bring a pot of water to a boil and blanch the apple slices for about a minute to soften them. Transfer the slices to an ice bath to stop the cooking process, then drain them on paper towels. Now it's time to work with the puff pastry. Roll out the pastry slab and divide it into 6 thin strips. Spread a layer of almond cream on each strip of pastry and then start overlapping the apple slices, leaving some space at the edge. Fold the extra dough over the apples to hold them in place, then cut the strip in half and form two roses. Continue this process until you have made all of your rose tarts. Place the edible roses in a prepared pan.

Storage

  • This convenient option allows you to prepare your tarts ahead of time and store them for up to 24 hours before baking, ensuring that you have a fresh and tasty treat ready to enjoy at any time. 

Baking

  • Preheat fan oven to 330ºF/160ºC. Bake tarts for 40-45 minutes. Dust with powdered sugar and cinnamon, and bake for an additional 8 minutes. Serve at room temperature or just warm. Enjoy!
