Ingredients
600 kg Banana
25 g Sugar
15 g Butter
50 g Orange juice
30 g Dark rum (optional)
180 g Dark chocolate disks or chopped
180 g Madarine marmalade

6 Viennois bread or pain de mie (see recipes).
Peel off bananas, cut in half and split. One banana makes 2 servings.
In a hot nonstick frying pan, toss in sugar and cook to light caramel stage. Add banana cut side down and throw in butter – cook a min or so. Flip and deglaze with orange juice and flambe with rum. Transfer immediately on plate to cool. Save juice.
Cut bread in half, butter and toast. Spread mandarine marmalade (see recipe), add chocolate, banana, a drizzle of the cooking juice, top with more chocolate and bread top.
Place under panini press or frying pan and press down using a heavy duty pan. Cut in half and serve. Enjoy!
