A beautiful side dish
Equipment
- 1 Skillet
- 1 salad spinner
- 1 Kitchen tongs
- 1 Shallow dish
Ingredients
- 3 each large endives
- 10 g balsamic vinegar
- 25 g wild flower honey
- 10 g olive oil
- 15 g butter
Instructions
Cooking Endives
- Rinse the endives under water and remove the outer leaves. Drain and pat them dry. Drizzle some honey in a shallow dish.
- Cut the endives lengthwise and arrange half of them cut side down. Season with salt, pepper, and a drizzle of olive oil.
- Top with the remaining endives and season again with a sprinkle of salt, a splash of balsamic vinegar.
- Add a drizzle of olive oil and a tablespoon of water.
- Cover with aluminum foil, and pre-bake endive at 350ºF (180ºC) for 35 minutes or until fork tender. Remove the foil, drain the liquid and save it for later use.
- Add chunks of butter and put in the oven for 10 minutes more, uncovered.
Caramelizing Endives
- To sear-caramelize the endives beautifully, add a light drizzle of honey in a skillet, and pour the last buttery cooking liquid as well. Arrange the cooked endive halves cut side down. Sear them in the oven at 410ºF (210ºC) for 15-20 minutes or in your wood-fired oven. Flip them and let rest.
- Serve honey braised endives with this fantastic Flemish beef stew.

This looks so simple and good. I will look for good endive when I am in a larger city that may have it.
Thank you for sharing.
Thanks Vincent, Keep me posted 🤗
