Crust

  • Roll out pastry into two 3mm sheet and freeze (one for the bottom and one for the sides). Grease cake ring with some room temperature butter and coat it in raw sugar (it adds extra crunchiness and ease un-molding). Use cake ring to cut bottom crust over a baking pan lined with parchment. Cut pastry strips from the other frozen pastry sheet; keep cold. Grab the frozen cake ring, remove excess frozen pastry and save for later use. Line sides of the cake ring with pastry strips. Do not hesitate to flash freeze pastry if it becomes too soft to handle. Keep the finished tart shell frozen before adding the almond cream.

Almond Cream

  • In the stand mixer fitted with the paddle attachment. Beat together the softened butter, sugar, almond meal and starch. Add the egg and alcohol and continue to mix until fluffy. Pipe out almond cream inside the frozen tart shell and freeze again.

Montage

  • Wash plums, halve with a sharp knife and remove the pits.

  • Carpet frozen tart shell sides and almond cream with thin slices of brioche. Spread blueberry jam and arrange plum halves artfully. Sprinkle finished pie with raw sugar and bake.

Baking

  • Preheat oven to 350ºF/180ºC. Bake blueberry prune pie for 55 minutes. Lower oven temp to 330ºF/165ºC if using a fan oven. Let cool pie for at least 2 hours before attempting to remove the cake ring.

How to Slice The Pie

  • To remove cake ring: top pie with plastic acetate or film. Place a baking tray on top and flip. Remove baking tray and parchment. Flip pie over again and refrigerate for 2 hours prior to cut. To make clean cuts, freeze pie for a couple of hours. Decorate pie with fresh blueberries and chopped almonds if desired. Let come to room temp before eating. Enjoy!
