- The yogurt cake became populaire after WWII thanks to the flourishing yogurt business. Then, the used yogurt container would be saved and used to measure the other ingredients which made the cake accessible to children.
Lemon Syrup
- Mix ingredients together.
Cake Batter
- Sift flour with baking powder; set aside. In a stand mixer fitted with the whisk attachment, beat eggs, sugar and oil on high speed for 8 minutes. Add yogurt, mascarpone and lemon zest and mix on medium low until smooth. Add sifted powders and mix on low speed until homogenized. Fill up greased cake can within 1/2-inch/1.25cm from the cake pan's rim.
Baking
- Bake in a fan oven at 330ºF/160ºC oven for about 50 minutes. Insert a toothpick into the center of the cake, it should come out clean. Let sit for 15 minutes prior to un-mold. Prick the cake with a bamboo skewer and moisturize cake generously with the lemon syrup. Let stand for 5 minutes, and do it again. Let cool to room temp and top with poached lemons if desired. Enjoy!
