Three Course Menu
- Dessert: Fruit Clafoutis
Mise-En-Place
- Wash off melon and trim off stems (that will stabilizes the shells). Cut melon in half crosswise and scoop out the seeds from the centres. Using a melon baller, plunge the edge of the melon baller into the melon, and rotate the edge all the way around to make perfect sphere. Continue with remaining melon. With a large spoon, scrap remaining flesh out and save and mix scraps with an immersion blender with a dash of lemon or lime juice and a pinch of salt; refrigerate. Pat dry and cut feta cheese into small cubes and add to the melon balls. Overlap basil leaf and thinly slice. Add basil to the melon-feta mixture and season with lemon or lime juice, olive oil, salt and pepper to taste.
Prosciutto Chips
- Preheat oven to 400ºF/200ºC. Lay prosciutto onto a baking tray lined with parchment. Top prosciutto with parchment and another baking tray and bake for 30 minutes until crisp. Keep in a sealed container at room temperature.
Montage
- This appetizer can be served in fancy Champagne cups, Martini cups or use the saved melon shells. Fill cup with melon-feta balls mixture and garnish with a drizzle of olive oil, more fresh basil and prosciutto chips cut into bite size pieces. Enjoy!
