Mixture 1

  • Blend almond meal and cashews in a food processor.

Mixture 2

  • In a large bowl, combine all ingredients, and add mixture 2.

Mixture 3

  • Combine all ingredients of the mixture 3, and divide into 2 batches. In a running food processor, puree it. Then, mix all ingredients together.

Montage

  • To start, you'll need to grease a square pan lined with parchment paper using a cooking spray. This will prevent the bars from sticking to the pan and make it easier to remove them once they are set. Next, transfer the mixture into the prepared pan and press it down evenly to ensure that the bars will hold together well. To set the bars, grease the top and cover with another piece of parchment paper, pressing down gently to seal. Then, refrigerate the mixture overnight to allow it to firm up. This chilling process will help the bars to keep their shape when sliced. Once the mixture has set, you can take it out of the pan and slice it into individual portions using a serrated knife. Aim for 2 ounces/60g portions for a satisfying snack size. The serrated knife will help you to cut through the nuts and dried fruits without crumbling the bars.

Storage

  • After you've cut the bars, you can store them in an airtight container in the refrigerator for up to 3 weeks.
