Cottage Cheese Filling

  • Drain cottage cheese well (fromage blanc). Clean fruits and reserve. In a small saucepan, heat up water. Combine sugar and agar and add it to the warm water. Bring to a boil and add figs and blueberry jam (fresh or frozen blueberries can be used instead, in this case add more sugar to taste). Bring to boil and cook for 2 minutes. Add port, boil again and blend. Split mixture in two. Refrigerate the first half to set completely. Reserve the other half at room temperature for the filling.

  • In the stand mixer fitted with the whisk attachment, beat cottage cheese, heavy cream and the room temperature fig-blueberry mixture until homogenized. Pour cottage cheese filling in a large glass bowl or serving cups. Refrigerate a couple of hours to set.

  • Blend the chilled fig-blueberry mixture and set aside. Beat the chantilly mascarpone to medium peaks. Grab the glass bowl from the refrigerator and finish the dessert with a layer of fig-blueberry mixture, cut fruits, chantilly mascarpone, more fruits, lime zest, and garnish with mint leaves, currants and cigarette russe. Enjoy!
