These Gouda cheese sablé cookies are the perfect appetizers to kick off any meal
Equipment
- 1 Food processor or stand mixer (fitted w/paddle)
- 1 Dough scraper
- 1 Bowl
- 1 Rolling Pin
- 1 Pastry brush
- 1 Cookie cutters
Ingredients
Cookie Dough
- 200 g Butter at room temp
- 2 g Salt
- 100 g Almond meal
- 1 ea. Egg
- 190 g All-purpose flour
- 60 g Gouda cheese shredded
- ¼ teaspoon Tabasco to taste
- 30 g Grated parmesan
Egg Wash
- 1 ea. Egg blended
Instructions
Cookie Dough
- In the food processor or stand mixer, process butter and salt. Add the almond meal and the egg and mix until combined. Add half flour; and mix to combine. Then add the remaining flour along with the shredded cheese, ground pepper and Tabasco. Mix until homogenized. Wrap up in plastic cling and refrigerate to firm up before rolling it.
Rolling & Cutting
- To ease the rolling process use half of the dough at a time. Flour your work surface and work the dough out until it becomes pliable. Roll out into a ¼-inch thick sheet. The dough should be supple but cool. Refrigerate it if needed. Divide dough into desired shapes using cookie cutters. Egg wash cookies and sprinkle some grated parmesan.
Baking Cheese Cookies
- Position rack in the middle of oven. Preheat fan oven to 350°F/180ºC. Bake cookies for about 10 minutes or until golden and crisp. Enjoy!
