Batter

  • Toast almonds for about 15 min in a 350ºF/180ºC oven; let cool and chop roughly. Stir in sugar, flour, egg whites and vanilla. Spoon out mixture out onto 2 baking trays lined with a parchment paper or silicon mat; leaving 2''/5cm space in between as cookies will spread during baking.

Baking

  • Bake croquant at 425ºF/220ºC for about 12 minutes. If using a convection oven, lower temperature to 390ºF/200ºC. Slide baked croquant onto a flat surface to cool down. Enjoy!

🇫🇷Appareil

  • Toaster les amandes et les hacher. Mélanger le sucre et la farine. Ajouter les blancs d’oeufs et la vanille. Faire des petits tas sur 2 plaques avec papier cuisson ou Silpat. Laissez un espace d’environ 5cm entre chaque croquant; ils vont s’étaler durant la cuisson.

Cuisson

  • Préchauffer le four a 220º ou 200º dans un four ventilé. Cuire pendant 12 minutes environ jusqu’a coloration. Faire glisser la feuille de cuisson sur le plan de travail et laisser refroidir complètement pour qu’ils deviennent bien croquant. Bon appétit!
