Apple Fritters

An easy treat
Ingredients
Batter
- 250 g Beer, at room temp
- 60 g Egg yolks
- 45 g Neutral oil
- 250 g All-purpose flour
- 7 g Instant yeast, or 12g fresh
- 3 g Salt
- 10 g Sugar
Meringue
- 90 g Egg whites (3)
- 1 g Cream of tartare, or 3g lemon juice
- 1 g Salt
Instructions
- 4 ea. apple such as golden delicious, granny smith, gala, pink lady... Peel, core, and cut apples into one-third of an inch (8mm) rings. Soak in water with a squeeze of lemon juice to prevent from browning.
Batter
- Combine all ingredients together and let rest for an hour.
Meringue
- Beat egg whites with salt and cream of tartar to soft peaks. Fold meringue in batter in two times using a spatula.
Frying
- In a large heavy-bottomed pot or dutch oven, heat some frying oil to 375ºF/190ºC. Meanwhile, pat dry apple rings on paper towels. Dip apple rings into batter and fry until golden brown. Coat apple fritters in a sugar and cinnamon mix. Serve warm – Enjoy!
