- Cut into fine brunoise vegetable such as cucumber, tomato, carrot, bell pepper, green apple, red onion, cucumber. Season with lemon confit, or zest, lemon juice or champagne vinegar, olive oil, salt and pepper. Add chopped fresh herds such as chives or parsley if desired. Cut cucumber into little drums. Scoop out some of the flesh and fill them up with vegetable caviar or top with a small watermelon ball seasoned with lime juice, mint leaf and a cube of feta cheese. Enjoy!
