Ingredients
- 18 slices Ancient dark rye bread (3 slices per serving) Recipe
Smoked Salmon Mascarpone Spread
- 300 g Smoked salmon chopped
- 250 g Mascarpone or cream cheese at room temp
- 20 g Mustard
- 1 each Lemon zest
- 15 g Lemon juice
- 10 g Fresh dill
Topping
- 250 g Smoked salmon sliced
- 20 g Drained and rinsed capers optional
- 15 g Black truffle optional
Instructions
- A traditional club sandwich is made using soft Pullman bread (pain de mie). However, club sandwiches can also be made with other types of bread. For example, dark rye bread is a classic choice to pair with smoked salmon and lemon. Make sure your dark rye loaf is a day or 2 old before slicing it.
- Dark rye bread slices can be toasted if desired.
Smoked Salmon Mascarpone Spread
- Pulse the mustard, mascarpone, lemon juice, and zest in a food processor. Add the salmon and pulse until smooth. Season with ground black pepper, to taste. No need to add salt, the smoked fish does the work. Refrigerate the spread until needed.
- Add a thick layer of smoked salmon spread on each slice. Drape smoked salmon slices over and scatter with fresh dill. Finish with a final dollop of salmon spread before closing the sandwich.
Topping
- Pipe on additional salmon spread and garnish with a couple of curled smoked salmon and cappers. Add black truffle shavings, if available.
