- 1 Microplane
- 2 bowls

- 18 slices Ancient dark rye bread (3 slices per serving) Recipe
Smoked Salmon Mousse
- 300 g Smoked salmon sliced
- 250 g Mascarpone at room temp
- 15 g Mustard
- 1 each Lemon zest

- 10 g Fresh dill
Topping

Instructions
- A traditional club sandwich is made using soft Pullman bread (pain de mie). However, club sandwiches can also be made with other types of bread. For example, dark rye bread is a classic choice to pair with smoked salmon and lemon.
- Sliced dark rye bread can be toasted if desired.
Smoked Salmon Mousse
- Pulse the mustard, mascarpone, lemon juice, and zest in a food processor. Add the salmon and pulse until smooth. Season with ground black pepper, to taste. No need to add salt. Refrigerate the mousse until needed.
- Spread the smoked salmon mousse onto each bread slice. Arrange a thin layer of smoked salmon over the mousse and scatter with fresh dill. Finish with a final dollop of mousse before closing the sandwich with the remaining bread slice
Topping
- Pipe on additional salmon mousse and garnish with curled smoked salmon and cappers. Add truffle shavings, if desired.
- Bon appétit!
