100 g Almond meal
140 g Cashews
Mixture 2
70 g Finely shredded unsweetened coconut
60 g Quick cooking oats
45 g Chia seeds
3 g Salt
30 g Cocoa nibs
60 g Dried blueberries
60 g Dried goji berries
50 g White sesame seeds, lightly toasted
Mixture 3
300 g Honey, warm
20 g Vanilla paste
60 g Dried blueberries
60 g Dried goji berries
20 g Açai powder (optional)
10 g Lemon zest (2)
15 g Pectin
10 g Crystallized ginger

Blend almond meal and cashews in a food processor; set aside.
Mixture 2

In a large bowl, combine all ingredients, and add mixture 2; set aside.
Mixture 3

Combine all ingredients of the mixture 3, and divide into 2 batches. In a running food processor, puree it. Then, mix all ingredients together.
Montage

With a cooking spray, grease a square pan lined with parchment. Transfer mixture into the prepared pan and press down evenly. Grease top and seal with parchment in contact; chill overnight. Flip and slice out into 2 ounces/60g portions using a serrated knife. Super food bars can be refrigerated for up to 3 weeks or kept frozen for months. Enjoy!
