In this video, I will show you useful tricks to cook eggs in a stainless steel pan without sticking. When water makes up 75 percent of an egg, if you can cook an egg flawlessly using a stainless steel pan, you can cook everything using the same protocol.
It varies according to the restaurant philosophy and chef's pedigree. Throughout my career, I have witnessed chefs using the worse of the worse cookware to the best. Since both do well on stovetop and oven, carbon steel and stainless steel pans are probably among the most trusted.
Unfortunately, most don't age well. Scratched or dented nonstick pans can be exposed to potentially toxic chemicals. In addition, having separate sets of nonstick utensils cookware looks and behave like annoying cheap toys.
One word: look for internationally recognized brands, made-in France, Belgium, Italy and USA. Google what the brand you've heard of and read reviews from different platforms. Thanks to the volume of sales, I believe that Amazon offers the fairest reviews. Always make purchases according to your budget and needs.
Crack each egg in a separate container or by 2. For multiple reasons, cracking eggs straight in the hot pan has never been a good idea. Meanwhile, chop fresh herbs such as basil, thyme, chives, parsley, oregano etc... Place pan over medium heat, then wait for 2 mins. Add fat and lightly salt the bottom of the greased pan (it creates a nonstick effect). When it begins to smoke, add the eggs and cook on medium heat for about 5 minutes. Always cook eggs over gentle heat, the egg whites should not turn excessively brown underneath. Turn off the heat and let sit in the pan for 2 minutes more. Season top of the eggs lightly with salt, and add your favorite herbs and spice. Enjoy!
