Caprese is an Italian salad, made of sliced fresh mozzarella, tomatoes, and sweet basil, seasoned with salt, and olive oil. It features the colors of the Italian flag: green, white, and red. The salad is named after the island of Capri, where it is believed to have originated. This caprese salad though has gotten a must try lifting, a sweet French touch brought by Cyril Lignac.
For a more vibrant green oil, fresh herbs can be blanched. Scald leaves (basil and spinach) in salted and boiling water, remove after a few seconds and plunge into ice water. Drain and press greens in paper towel to remove excess moisture. Blend herbs with oil and sieve.
Wash off veggies and fruits. Slice out cucumber, tomatoes and mozzarella. Arrange all components harmoniously on plates. Season with fleur de sel, ground black pepper, raspberry sauce and basil oil. Add lemon zest if desired. Enjoy!
