Pistachio Almond Cream

  • In the food processor, combine the softened butter and pistachio paste until smooth, then add the sugar, almond meal, pistachio meal, and flour. Add the egg and mix well. Finally, add a couple of drops of almond extract to taste.

How To Line A Tart Pan?

  • Butter the tart pan. Lightly flour your work surface by sprinkling flour over it. Press down on your ball of dough and work it out a bit to make it pliable. Roll out the dough using a rolling pin until it is 3 mm thick. Roll the pastry over your rolling pin, place the pan in front of you, and unroll the pastry over it. Push the dough against the base of the pan with your fingers to form a right angle. Trim off any excess pastry overhanging the pan, using your hands to create a clean edge. Prick the tart shell lightly with a fork and freeze until ready to bake.

Assembly

  • Cut the apricots into quarters. Spread the pistachio almond cream in the tart shell. Sprinkle some extra almond meal over it (this absorbs the fruit juice released during baking). Arrange the apricot quarters on top.

Baking

  • Preheat a fan oven to 350ºF / 180ºC. Bake the pie for 20 minutes, then dust with powdered (or granulated) sugar. Put the pie back in the oven and cook for 45 minutes more, until the fruit is cooked through. Top the pie with crushed pistachios. Let it cool, then unmold. Serve the pistachio pie at room temperature or just warm.
