Cooking Sunny Side Up Eggs

  • Crack each egg in a separate container or by 2. For multiple reasons, cracking eggs straight in the hot pan is not the best idea. Meanwhile, chop fresh herbs such as basil, thyme, chives, parsley, oregano etc... Place pan over medium heat, then wait for 2 mins. Add fat and lightly salt the bottom of the greased pan (it creates a nonstick effect). When it begins to smoke, add the eggs and cook on medium heat for about 5 minutes. Always cook eggs over gentle heat, the egg whites should not turn excessively brown underneath. Turn off the heat and let sit in the pan for 2 minutes more. Season top of the eggs lightly with salt, and add your favorite herbs and spice. Enjoy!
