Chocolate Mixture
- In a bain-marie, melt together butter, chocolate, sugars, light corn syrup and instant coffee. As soon as the chocolate mixture reaches 110°F/43ºC, remove from the heat.
Egg Mixture
- Meanwhile, beat the eggs with the vanilla and salt. Add sour cream and cocoa powder. Add chocolate mixture to the eggs, mix to combine. Add crushed nuts and chocolate chips. Spread chocolate mixture over the prepared baking tray.
Baking
- Preheated fan oven to 330ºF/160ºC. Bake brownies for about 20 minutes. The brownies should feel set on the edges, and the center should look moist still. Refrigerate overnight before cutting into portions. Enjoy!
Storage
- Brownies can be kept at room temperature for a couple of days, refrigerated for 5 days or keep frozen for up to 3 months.
