Apple Fritters

Ingredients

Batter
 250 g Beer, at room temp
 60 g Egg yolks
 45 g Neutral oil
 250 g All-purpose flour
 7 g Instant yeast, or 12g fresh
 3 g Salt
 10 g Sugar
Meringue
 90 g Egg whites (3)
 1 g Cream of tartare, or 3g lemon juice
 1 g Salt

Directions

4 ea. apple such as golden delicious, granny smith, gala, pink lady...
Peel, core, and cut apples into one-third of an inch (8mm) rings. Soak in water with a squeeze of lemon juice to prevent from browning.

Batter

Combine all ingredients together and let rest for an hour.

Meringue

Beat egg whites with salt and cream of tartar to soft peaks. Fold meringue in batter in two times using a spatula.

Frying

In a large heavy-bottomed pot or dutch oven, heat some frying oil to 375ºF/190ºC. Meanwhile, pat dry apple rings on paper towels. Dip apple rings into batter and fry until golden brown. Coat apple fritters in a sugar and cinnamon mix. Serve warm – Enjoy!
