  • 250 g Roasted apricot ice cream Recipe
  • 80 g Chilled apricot pie leftovers Recipe
  • 40 g Apricot marmalade Recipe
  • 25 g Raspberry coulis
  • 100 g Chantilly
  • 10 g Toasted crushed pistachios
  • 40 g Apricot, strawberries, raspberries...

Maple Black Walnut Ice Cream Sundae

  • 30 g Chocolate sauce Recipe
  • 250 g Maple black walnut ice cream Recipe
  • 80 g Jocond biscuit or cookie leftovers
  • 80 g Whipped cream
  • 20 g Crushed hazelnuts/walnuts lightly toasted

Whipped Cream

  • 500 g Heavy cream 35% chilled

The concept was simple: offered custom, outsourced gelatos paired with an array of toppings, so guests could build their dream sundaes on the spot.

  • Ice cream is just ice cream itself. A sundae has a number of other things added to the ice cream such as toppings, whipped cream, nuts, sprinkles and traditionally a maraschino cherry on top. Are you bored?.. wait.

Before You Start

  • A day prior or two hours at least before you start, freeze utensils, glass cups, and baking trays.

Roasted Apricot Ice Cream Sundae

  • Get all the ingredients needed ready. Pull ice cream out of the freezer. Arrange 2 upside down frozen trays (keep one in the freezer for backup) onto a kitchen towel. Roughly chop the apricot pie.
  • Add some of the apricot marmalade.
  • Fold to combine.
  • Soften up ice cream and add it to the crusted mixture.
  • Drizzle some of the raspberry coulis in the frozen cup.
  • Scoop out 3 roasted apricot ice cream balls.
  • Fill empty spaces with more apricot marmalade, apricot wedges and strawberries.
  • Top with Chantilly, more fruits, coulis and crushed pistachios. Enjoy!

Maple Black Walnut Ice Cream Sundae

  • Drizzle some chocolate sauce inside the frozen cup.
  • Mix up walnut ice cream with cookies or jocond biscuit...
  • Scoop out 3 ice cream balls.
  • Finish with whipped cream, toasted nuts an chocolate sauce.

How to Build Large Ice Cream Sundaes

  • Marry your favorite ice cream flavors. First off, freeze containers and place frozen ice creams you wish to use in the refrigerator for 30 minutes. Build your sundaes, and freeze sundaes (without the whipped cream), for up to 3 days. 40 minutes prior to serve: Place sundaes in the refrigerator. Right before serving, finish sundaes with coulis and sauces, whipped cream, fresh fruits, more coulis, upside down broken waffle cones, tuiles and nuts. Here are 2 examples: An exotic and red fruits sundae.

Coconut & Mango & Passion Fruit Sundae

  • To make an exotic sundae, alternate coconut and mango ice cream scoops in a previously frozen container.
  • Use frozen leftovers joconde biscuit, sable crust, cookies or other sponges.
  • Cover ice cream with pieces of crust or sponge. Drizzle some passion fruit coulis, and sprinkle a tablespoon of toasted unsweetened shredded coconut. Freeze.

Blueberry & Cassis & Chocolate Sundae

  • Alternate scoop of cassis and chocolate ice creams.
  • Top with pieces of Blueberry Ice Cream Pie or leftovers sable breton, pastry crust or cookies and blueberry ice cream. Freeze.

40 Minutes Before Enjoying

  • Transfer sundaes from the freezer to the refrigerator 40 minutes before serving. Spread fresh fruits all over if desired like mango and banana for the exotic and red fruits for the blueberry cassis chocolate sundae.
  • Top sundaes with whipped cream.
  • Drizzle over more coulis, and garnish with fruits, toasted nuts and waffle cones. Serve immediately!
