Pretzel Pals

 500 g Bread flour
 275 g Water at 54ºF/12ºC
 14 g Instant yeast or 25g fresh yeast
 10 g Salt
 8 g Sugar
 30 g Butter
 15 g Vegetable oil
Lye Solution
 2500 g Water
 100 g Baking soda
 15 g Pretzel salt (optional)


Mixing Dough

In a stand mixer fitted with the hook attachment, mix all ingredients on low speed for 2 min. Increase to medium speed and mix for 6 min or until dough comes off the sides of the bowl. This dough should remain firm. Transfer dough on countertop (no extra flour needed), form a tight ball and let rest 10 min covered.


Scale out into 100g portions, shape into tight balls and leave to rest on the counter for 15 min; covered. Divide each round into 2 portions, save one half for the body and divide the other half into 6 small pieces for the body part, arrange them in order – shape into tight balls and cover to rest. As soon as the last one is done, begin to shape into desired pretzel pals. The video shows in details how to make a turtle, lobster and crab.

Lye Solution

Bring to boil water and baking soda. Dip in the half frozen pretzel pals and arrange them on greased parchment paper. Sprinkle some pretzel salt is desired.


Bake in preheated oven for 12 to 14 min at 425ºF/220ºC. Cool on wire rack. Enjoy
